Viking builds its wine cellars on the same commercial-kitchen logic as the rest of the range: heavier hardware than the category average, a compressor system rather than thermoelectric even in the small undercounter units, and a controller that is deliberately simple. That combination ages well mechanically and less well electronically — the metalwork on a fifteen-year-old Viking is usually fine while the controller and the sensors are where the faults collect.

The undercounter units are the ones we see most in the Bay Area, built into island runs and bar returns. Those installations are unforgiving about ventilation: a Viking undercounter needs the front grille clear because that is its only air path, and a cabinet fitted flush with no front clearance will run the compressor continuously and never reach set point.
These units breathe entirely through the front. A trim piece or a cabinet panel fitted across the grille will hold the cabinet several degrees high permanently. It is the first thing we check on an undercounter that has never held temperature since the day it was installed.
The Viking controller is simple and reliable until it is not. A failing controller commonly holds an accurate display while cycling the compressor on the wrong threshold, which reads to the owner as a unit that is slowly getting worse.
A dual-zone Viking moves air between zones with a fan and a damper. When the fan fails, the two zones converge on one temperature and the panel keeps showing the two set points you asked for.
Viking doors are heavy even by built-in standards. The gasket takes a set at the hinge side first, and the resulting gap is small enough to be invisible and large enough to sit the cabinet three degrees high.
An undercounter unit in a bar return collects dust and, in some kitchens, cooking grease on the condenser. A fouled coil raises the whole cabinet and shortens the compressor life if it is left.
Viking parts support is good for the Professional line, including older undercounter cellars, and we install genuine OEM components. Controllers and sensors are the parts most often needed on these units.
Genuine OEM parts where the manufacturer supports the model, and a specification-matched equivalent where they do not — told to you before it is fitted.
Check the front grille before anything else. These units take all their air through the front, and a cabinet panel or trim fitted across it will hold the cabinet high permanently. That is an installation fault, not a refrigeration fault.
That is the pattern for a failed evaporator fan or a stuck damper in a dual-zone cellar. The panel keeps displaying both set points because it reports what it was asked for, not what the cabinet is doing.
The mechanical build is heavy and generally sound well past fifteen years. What fails is electronic — controllers, sensors, fans — and those are serviceable parts. We assess the sealed system first and tell you plainly if that is the problem, because it is the one that changes the answer.

Model, what the panel says, and what a thermometer on the shelf says. That is usually enough to know what we are walking into.
Our EuroCave held the lower zone fine but the upper zone crept to the low sixties. He put a probe in on the shelf, watched it through a cycle, and showed me the upper evaporator fan was stalling. Fan swapped, both zones now sit where they are set. He also explained why the door display and the shelf temperature never read the same.
Perlick where the display read the set point but the wine was clearly warm. He proved the sensor was reading four degrees low by comparing it to a calibrated probe on the shelf. Thermistor replaced. Simple in the end, but I would never have found it.
Both zones of the Allavino locked to the same temperature no matter what we set. He diagnosed a failed damper motor in the upper zone, replaced it, and then had me run the unit for a week before he was willing to call it done.
