EuroCave builds a cabinet, not a refrigerator. The cold air comes off a single evaporator plate at the back and falls down a chimney behind the shelving, so the cabinet holds one temperature top to bottom with very little stratification. That design is why a EuroCave keeps wine well, and also why it fails in a specific way: anything that interrupts the airflow behind the shelves shows up as a temperature that reads correct at the sensor and is wrong at the bottle.

The other EuroCave signature is humidity. The units run a passive humidity source — the ceramic brick or the water tray depending on the generation — and a charcoal filter that has to be changed. When people report a musty cabinet or dry corks on a EuroCave, the cause is usually one of those two consumables, not the sealed system.
EuroCave puts the control electronics in a module behind the top or bottom panel. When the NTC probe drifts, the module holds its own reading faithfully while the shelf sits several degrees off. We compare the panel against a calibrated probe on the middle shelf before anything gets replaced.
The internal fan is what pushes cold down the chimney. A stalling fan gives you a cold top and a warm bottom, or the reverse in the multi-temperature models, without the display ever complaining.
Both are consumables. A blocked filter starves the air exchange and a dried-out brick drops the cabinet humidity into the thirties, which is what dries corks. Neither triggers an alarm.
The glass door is heavy and the hinge bushings wear. A few millimetres of sag lifts the gasket off the frame at the top corner and you get a permanent warm spot and condensation on the glass.

The panel reports the regulation probe, which sits in the air path, not in a bottle. A drifted probe or a stalled internal fan will produce exactly that gap. We measure both before replacing either.
Yes, on the schedule in the manual. It is the only air exchange the cabinet has. A blocked filter is a common cause of a stale-smelling cabinet that otherwise runs perfectly.

The cooler in our bar area was running hot because it had been built into a cabinet with no ventilation gap at the back. He documented it, cut a rear vent with the cabinetmaker, and the compressor now cycles instead of running continuously. That was the actual fix.
Upper zone would not go below sixty-two no matter what. Solenoid valve stuck. He carried the part and had it done in one visit, which I did not expect for a Cavavin.
Our EuroCave held the lower zone fine but the upper zone crept to the low sixties. He put a probe in on the shelf, watched it through a cycle, and showed me the upper evaporator fan was stalling. Fan swapped, both zones now sit where they are set. He also explained why the door display and the shelf temperature never read the same.
