Variable-speed evaporator fan
Perlick modulates fan speed rather than cycling it. A failing fan or a failing driver gives you a unit that holds set point overnight and loses it during the day, which reads as an intermittent fault.
Brand · Commercial-grade under-counter
Perlick came out of commercial bar refrigeration and it shows in the build: stainless interiors, commercial hinges, and a forced-air system designed to recover fast after the door has been open. The forced-air design is the reason a Perlick holds temperature better than most under-counter units and also the reason a fan fault is more visible on one — the cabinet depends on air movement, not on mass.

Perlick units are frequently installed in outdoor kitchens and bar areas around the Bay, which brings its own failure mode. An outdoor-rated cabinet in a Peninsula summer runs at the top of its ambient range for weeks, and any marginal condenser or fan will surface there first.

These units allow a service calibration offset. A previous technician setting an offset to mask a drifting probe leaves you with a machine that is wrong in a new way once the probe drifts further. We reset the offset and measure from zero.
The doors are heavy commercial assemblies. Once the hinge wears, the door stops self-closing at the last inch and the cabinet runs warm with no fault code at all.
Outdoor units collect far more condensate. A blocked drain shows up as standing water in the cabinet floor and, eventually, corrosion at the ribbon connector behind the control panel.
Perlick supports its residential line well and part numbers are stable across long production runs. Commercial-grade fans and hinges are usually stocked domestically.
Genuine OEM parts where the manufacturer supports the model, and a specification-matched equivalent where they do not — told to you before it is fitted.
The outdoor-rated models are. An indoor model installed outside will run at the top of its range all summer and fail early. The model number tells you which one you have.
Hinge wear. It is a mechanical repair, not an electronic one, and it is worth doing promptly because a door that sits open a millimetre costs you the whole temperature range.

Model, what the panel says, and what a thermometer on the shelf says. That is usually enough to know what we are walking into.
Condensation running down the inside of the glass door of our built-in every summer. He explained the dew-point maths, checked the door heater circuit, and found it open. Replaced the heater wire assembly and the glass has been clear since. He did not charge us for a second visit to confirm it.
Two coolers at our place in Napa, both running warm. He found one had a genuine fault and the other was simply overloaded with bottles packed against the evaporator plate. He fixed the first and rearranged the second, and only charged for the one that needed work.
Gurgling and clicking loud enough to be a nuisance in an open-plan kitchen. He identified the clicking as normal refrigerant flow and the gurgle as an over-filled charge from a previous repair by someone else. Recovered and recharged to spec. Almost silent now.
